Panera Bread Company Reports $1 Billion In Digital Sales

ST. LOUIS, MO/June 14, 2017 (STLRestaurant.News) Digital innovations seems to be paying off for Panera Bread Company.
The St. Louis-based company announced that digital sales have surpassed $1 billion on an annualized basis and could double in 2019.   As of the end of Q1 2017, system-wide digital sales, which include orders made via mobile, web, or kiosk, were 26 percent of total company sales.

“By building digital into the core aspects of our business, we’ve transformed the customer journey at Panera,” said Ron Shaich, Panera’s Founder, Chairman and CEO.

“For us, it’s not just about new technology for technology’s sake—it’s about making the guest experience better.” Shaich added.
Blaine Hurst, Panera’s president, shares in this belief that technology is benefiting the company and the restaurant experience for customers.

“When you couple digital innovation with operational integrity, the result is a significant level of digital adoption at the guest level.  Our holistic approach to technology pushes us to find new ways to make a difference in the lives of guests – which translates to the kinds of sales we’re seeing today.” Hurst explained.

Panera’s digital ordering integrates with MyPanera®, the restaurant industry’s largest loyalty program with more than 25 million members.   Panera reports that this translates into approximately 1.2 million digital orders per week.  Through MyPanera, customers are able to save their favorites, earn and track rewards, and receive personalized special offers.
On April 25, Panera reported its first-quarter earnings of $1.83 a share on revenue of $728 million.

“Indeed, the power of our plan is evident in our business results.  In Q1, our Company-owned bakery-cafe comps were up 5.3%.  What’s more, we continued to take market share in Q1, as our comps outperformed the Black Box all-industry composite by 690 basis points.  With peak investments and significant scale behind us, our year-over-year growth in GAAP EPS 2 was up 30% and non-GAAP EPS was up 17% in Q1, our best quarter in four years, which is further evidence that we have reached an inflection point in our transformation.” Shaich.

This comes after Panera and JAB announced its definitive merger agreement in early April.

Walsh, who holds an associate’s degree in culinary arts, has previous experience working as a manager and pastry artist at Piccione Pastry and as a baker, candy maker, and chef at various bakeries and businesses throughout St. Louis.

While Walsh enjoys many facets of working at McArthur’s, she particularly appreciates the direction in which the bakery is headed.

As a fan of sweet treats, Walsh enjoys making pastries and tweaking the recipes, finding new, exciting combinations that patrons will enjoy.

As for her specialties, Walsh excels in creams and caramels.

“They are so versatile and can be used in a lot of pastries,” Walsh said.

The shop was founded by the three Gambaro brother’s in 1923.  Their sons and daughters grew up working in the bakery a long side the family and eventually took over the business.  Ninety-three years later, this family legacy is still impressing customers from near and far.

Missouri Baking Company has a way of taking each and every visitor back to their childhood days.  The original freezer and the old-fashioned cabinets, and the rows of tables with heavenly baked items, bring you back to the olden days…a time when all things seemed so much more innocent and life was so much simpler.

And with Christmas right around the corner and dreams of sugar plums dancing in our heads…it’s the perfect place to make a visit to for some traditional Italian Christmas cookies and other delectable treats.  The magnificent aroma of freshly baked goods reaches your senses the minute you step through the front door.

There are way too many goodies to name them all but to me a few stands out above the rest.  Of course, there’s the 2015 award winning Gooey Butter Cake that melts in your mouth.  The Ricotta or Italian Cream Cannoli’s are heavenly, the Tiramisu to die for, and the fabulous Italian butter cookies are gloriously rich and sinfully good.  One sweet is simply better than the next, which means you can’t go wrong on anything you purchase.

There are also four kinds of biscotti, and additional cookies such as Chocolate Drops, delicate Shortbreads, Nut-Based Crunchy Squares, and Amaretto Macaroons.  A few of the items might sound foreign to some but if you haven’t tried them, then you should.  One is the Cuccidati made with figs, raisins, pine nuts, chocolate chips and orange zest.

Another is the Panetone bread, pronounced with the correct Italian emphasis, Pan-e-tone-a. I only know about it because I’m Italian and grew up having it at my Nona’s home every Christmas.  It’s a sweet yeast bread of Milanese origin, considered a Christmas classic for Italians everywhere.  What could be more festive than a tall, puffy, round bread studded with raisins and candied citron?  Especially our version… soaked in rum.

Offering Sweets from Scratch to Go!

FAIRVIEW HEIGHTS, IL: (STLRestaurant.News) – Sweet-toothed residents in the metro-east now have a new, daily source of scratch-made goodies!  After a year of baking custom cakes and sweets, Lizzie Bob’s Sweets From Scratch has opened a storefront bakery at 823 Lincoln Highway, #102 in Fairview Heights.  Lizzie Bob’s owner Elizabeth Toepfer’s has been baking and designing cakes for more than 15 years.  For the last year her company Lizzie Bob’s Sweets From Scratch has been supplying custom cakes and treats on a special order basis.  So when she opened the new bakery, she had one goal in mind: make it easier for customers to get her sweets from scratch every day.  And customers who already know and love her delectable treats are celebrating.  Soon others will discover the carefully crafted, scrumptiousness of Lizzie Bob’s baked goods.

The new bakery officially opened Tuesday, November 15th with customers coming in before the sun was fully up.  If you missed the grand opening, you can still check out the new bakery any Tuesday – Friday from 6:00 a.m. to 3:00 p.m. and Saturday 7:00 a.m. to 1:00 p.m.  You’ll find a daily selection of scratch-made baked goods including cupcakes, pies, brownies, scones, cheesecake, cookies, cannoli, pizzelle (those delicate Italian waffle cookies), gooey butter cake, rice Krispy treats.  Plus there’s homemade bread, rolls, soups, sandwiches, coffee, tea, and even dog treats!  This month’s special is Lizzie Bob’s fresh baked, personal-sized Streusel Apple Pie!  As in her special order business, everything at the new bakery is made fresh and from scratch.

When Toepfer says she makes her goodies from scratch, she means everything—right down to the cake flour, which she makes herself!  She also makes her own modeling chocolates and all of her butter cream frostings (vanilla, chocolate, strawberry, lemon, orange, and raspberry!)  As if that wasn’t enough, she makes all her own whipped cream frostings in vanilla, chocolate and strawberry.  Toepfer says her husband and kids act as taste testers and quality control inspectors as she experiments with new creations.

A self-proclaimed “science nerd,” Toepfer enjoys developing new ingredients and new recipes for her bakery.  Right now she says she’s working on creating her own vanilla extract and flavor emulsions.  And in response to customer requests, she’s developing a line of diabetic sweets.  In creating her sweet treats, Toepfer is guided by her own desire to maintain a healthy lifestyle.  That’s led her to use only fresh vegetables, fruits, and herbs in her cooking and baking.

Besides the daily selection in the new shop, Lizzie Bob’s continues to offer dessert table catering for special events including weddings, showers, birthday parties, office parties, anniversaries, grand openings, etc.  They’ll create custom themed cakes, cupcakes and cookies.  Orders can be placed online, by phone at (618) 334-4917, or in person at the shop.  You can even arrange to have them deliver and set up!

KIRKWOOD, MO: (STLRestaurant.News) It may have taken ten years to get to the point of opening his very own bakery that bears his name, but for Nathaniel Reid, it’s been a lifelong- dream come true, no matter how long it took to get here.  The Nathaniel Reid Bakery in Kirkwood made its debut on August 1st.

The 36 year old Reid, a Farmington native returned to St. Louis in 2013.  By then he was already a star.  After graduating from the highly acclaimed Le Cordon Bleu in Paris, he went on to win the U.S. Pastry Competition and was named Pastry Chef of the Year in New York City in 2010.  Then in 2012, he was recognized as one of the Top 10 Pastry Chefs in America by Dessert Professional Magazine.  And he’s never looked back since.

Reid specializes in contemporary bakery creations with a European finesse.  He wears many different hats, operating as a pastry chef, consultant, and educator.  He most recently served as pastry chef at the Ritz-Carlton Hotel.  Before that he held positions at prestigious places like the St. Regis Hotel, a Forbes Five-star and AAA Five-Diamond resort in California, and with Michelin Three-Star Joël Robuchon Restaurant at The Mansion Hotel (MGM Grand) and the Ritz-Carlton Hotel, both in Las Vegas.

But his success never distracted him from his dream to open his own bakery.  The Nathaniel Reid Bakery is co-owned with his pastry chef wife, Lee Lee. It’s not a huge shop but quaint and comfy and plenty big enough to sit and delight in any one of Reid’s decadent creations.  It’s like being in a jewelry store looking at the most unique and beautiful gems.

There’s sinful chocolate cake with a layer of raspberry filling, and a mousse filled with raspberry tea and garnished with white chocolate & raspberry glaze, a cinnamon bun made of brioche dough with butter, brown sugar, and pecans—then topped with even more butter, brown sugar, and pecans, a signature, a twice-baked chocolate croissant cut in half, stuffed with homemade almond paste and chocolate topped with almonds and baked again.

So whether you’re in for one of Nathaniel’s signature breakfast pastries, tarts or a fresh croissant with your morning coffee, a salad and sandwich for lunch, perhaps a homemade chocolate bar for a snack, or that to-die-for layered yogurt cake with apricot-passion fruit filling topped with white chocolate for a party, there’s simply no way to go wrong.

LOUIS, MO: (STLRestaurant.News) Top 10 Bakeries: do you know anybody that does not like baked desserts?  I don’t!  I know its my biggest weakness.  However, I tend to enjoy the junk baked goods like Little Debbie products.  Swiss Cake Rolls to be more specific.  However, don’t worry.  There are much better alternatives than store bought 20 year old baked desserts for your enjoyment.  Also there is nothing wrong with the taste of a Hostess Honey Bun, but some of the bakeries listed might not agree.

Missouri Baking Company, our #1 rated position has been in business since 1924 according to their Facebook page.  That is an impressive number.  Almost 100 years old and in the same family.  Can’t find those family traditions on every street corner.  Congratulations to Missouri Baking Company.  Keep up whatever it is that you’ve been doing for almost 100 years.
