Acclaimed Vegetarian Pizzeria Sold to First Time Restaurateur
St. Louis, MO/September 10, 2017 (STLRestaurant.News) – Sold is better than closed. That’s the new mantra for St. Louis’ vegetarian pizza lovers in the wake of news that Scott Sandler has sold Pizzeoli, his popular vegetarian and vegan-friendly pizzeria in Soulard. Sandler had opened the wood-fired pizza restaurant at 1928 S. 12th Street in 2014. The petite eatery features a simple menu of authentic Neapolitan-style pizza with a twist—everything is vegetarian and vegan.
In May of this year, Sandler opened Pizza Head (3196 S. Grand Blvd.) in the South Grand Restaurant District near Tower Grove Park. At that time, Sandler had said he was considering the possibility of opening more Pizza Head branded locations. Now that he’s sold Pizzeoli, his focus will be on his newer, punk-influenced, New York-style pizza joint. Sandler told the St. Louis Post-Dispatch that he was stretched too thin to comfortably run both restaurants. He called selling Pizzeoli a “quality of life” decision.
The new owner, Collinsville native Kyle Weber officially took over the 900-degree Pizzeoli oven this week (9/5/17). He is a first-time restaurateur with a background in marketing. After working in Tennessee, he returned to St. Louis where his father (who has a background in the restaurant industry) told him about the opportunity to buy Pizzeoli. As a self-described “foodie,” it was an opportunity that was too good to pass up. Weber got his pizza-making training from the Associazione Vera Pizza Napoletana’s VPN Americas—the same training as Sandler—meaning Pizzeoli will continue to offer authentic Naples-style pizza.
On Pizzeoli’s Facebook page, Sandler wrote that Weber will make Pizzeoli special “in his own way.” He added that Weber will be keeping all the vegan options that made the pizzeria popular. For his part, Weber has said he is looking to increase Pizzeoli’s small menu by adding appetizers, more salads, and some meat toppings. He also plans to expand the pizzeria’s craft beer and wine selection and introduce craft cocktails to the mix. He says these will be additions to Pizzeoli’s current offerings, rather than changes to menu. His goal is to make Pizzeoli more appealing to Soulard residents and visitors, while maintaining the restaurant’s vegetarian and vegan customer base.
Pizzeoli is open evenings, 5–9:00 p.m. Tuesday through Thursday and 5–9:30 p.m. Friday and Saturday. So, another addition Weber says he will make is bringing back lunch service. He’s also looking for local sources who can supply him with organic, antibiotic-free ingredients as he adds items to Pizzeoli’s already popular menu.
