Chef Jessie Gilroy Leaving Sidney Street for Own Digs
ST. CHARLES, MO/July 9, 2017 (STLRestaurant.News) Pangea was theoretical supercontinent that made up all of the land on Earth before the dinosaurs roamed. Everything was Pangea, and for land dwellers, Pangea was everything. So, it’s an interesting name Chef Jessie Gilroy has chosen for the new restaurant she’s opening this fall in New Town at St. Charles. Pangea at 3245 Rue Royale, St. Charles will be an eclectic neighborhood eatery, offering upscale food in a casual atmosphere.
Gilroy worked most recently as sous chef at Kevin Nashan’s famed Sidney Street Cafe. She also spent years learning everything she could while working in the kitchens of some of St. Louis’ favorite restaurants including Charlie Gitto’s on The Hill, The Tavern Kitchen & Bar, Cucina Pazzo, and Peacemaker Lobster & Crab.
The new restaurant will feature an eclectic menu that reflects her own eclectic culinary taste. Gilroy says she loves all cuisines and really can’t pick a favorite, so that will be reflected in Pangea’s menu. It will draw on a mix of cuisines, including Indian, French, Italian, and Spanish, fusing the elements of several into unique, cohesive dishes that introduce diners to new flavors blended with the familiar. She chose the name Pangea to embody this global approach to cooking.
She also wants to create a restaurant that is at once comfortable, but with an elevated menue. She calls her concept “casual fine dining.” In an interview with The Vital Voice, Gilroy said she wants to give people access to the kind of food you find in a fine dining establishment, but without the linen tablecloths, dress-up clothes, and budget-blowing prices.
Gilroy got the keys to her new restaurant earlier this month. Since the space that will be Pangea was once a restaurant (the Cornerstone Cafe), Gilroy says it won’t need much of a rebuild, just some cosmetic changes.
